Georgie’s lunchbox

It’s not easy to prepare a healthy and creative lunchbox when it has to be portable, nut-free (school policy) and liked by fussy eaters. A great deal of preparation is required that includes shopping for ingredients and night-before arrangements. I often prepare Georgie’s lunchbox about the same time I make dinner which tends to lighten the morning load. I also like to set aside an afternoon or morning during the week and weekend when I can cook/bake/prepare a dish that can be stored in the fridge for a few days. These dishes include pasta, boiled eggs and roasted chicken.

Here’s what I pack for Georgie’s lunch on most days.

Most fruit and almost all vegetables are purchased from Be Natural Health Food store in Agladjia, Nicosia as are any other products stated as organic. The rest can be found at local supermarkets. Bagel is from Qboo Bakery in Nicosia but available at Be Natural too.

Please excuse the quality of the photos. All are taken at roughly 6.30 in the morning when there’s barely any light in my kitchen and there’s barely any energy in me.

    Awesome ideas for lunch. I love the fruits and bread. In my daughter’s lunch box, I always put rice.
