In the kitchen: Vegetable soup

It’s the last day of autumn and actually getting colder here in Cyprus so bring on the fireplaces, cozy jumpers and hot soups. In our home this soup is a favourite. Its easy to prepare, delicious and healthy and a great way to include the kids in the cooking process as they can help by chopping up the various soft veggies.

What I love about this soup is that there are no rules to follow when making it. You can add any and as many vegetables as you want. These are the vegetables we prefer: potatoes, sweet potatoes, mushrooms (oyster and button), carrots, onions, garlic, baby corn, bell peppers (yellow, green, red, orange), broccoli, cauliflower and peas. You can even include pasta or rice, which is what I like to do as rice gives it more texture.

I like to stir fry everything with olive oil before adding water but that is totally up to you. Another ingredient I’ve been adding lately that has taken this soup to another level is an organic swiss vegetable vegan bouillon powder, which is a flavour enhancer and perhaps, you’d think, completely unnecessary in this case but trust me it makes a huge difference. Plus its been a great pantry addition because it works in stews, casseroles and even with just plain hot water.
