For a long time I used to wrap potatoes in foil and put them in the oven whenever we fancied baked potatoes.

Then I became aware of the health risks of aluminum foil in cooking and decided to try a different method. And I am so glad I did because this produces the best baked potato ever!

Scrambled eggs with three veggies

I often have an intense craving for scrambled eggs. But I can’t always decide with what. I know cheese is an obvious choice but here in Cyprus we like to team our eggs with veggies such as tomatoes, spinach and courgettes. And I really like that.

I happen to like it so much that on more than one occasion I have made all three in one go. My plate looked phenomenal teamed with a kale and avocado salad.

In the kitchen- Flourless peanut butter chocolate chip mini blender muffins

This has to be the easiest muffin recipe ever. I mean, I am fully aware that muffins are easy to make but this is utterly ridiculous. All you do is stuff the ingredients in a blender, blend and scoop. And the best part is NO FLOUR and NO SUGAR! And yes, they are mouth-watering yummy.

Ingredients include peanut butter, one egg, one banana, baking soda, vanilla extract, honey and chocolate chips, which are optional.

In the kitchen— magic custard cake

Pinterest has become a daily obsession of mine. I always look to it when I need inspiration in the wardrobe department, ideas on home interior and an interesting recipe . It’s been a while since I discovered this Magic Custard Cake but I only got round to making it yesterday. Can I just say wow?
