In the kitchen — green dip

Leftover edamame and avocados, were two of the ingredients I used to make this green dip. You can add fresh garlic-if you’re brave and won’t be socialising for the day- some basil or cilantro, lemon and olive oil. Put everything in a blender and enjoy with warm pitta bread or chicken.

Pinterest has become a daily obsession of mine. I always look to it when I need inspiration in the wardrobe department, ideas on home interior and an interesting recipe . It’s been a while since I discovered this Magic Custard Cake but I only got round to making it yesterday. Can I just say wow? Give absolutely no thought to the amount of icing sugar and milk it contains and go for it! You can find the recipe here.

The perfect breakfast. The perfect dinner. We love pancakes no matter what time of day it is. I’ve been whipping up batches and serving them throughout the day over the last couple of weeks. Georgie couldn’t be happier especially when they’re dripping with honey and butter. There are unlimited recipes online. Pinterest is a favourite of mine. Next on my list of pancake favourites to try are Dutch Pancakes. Look them up and give them a go.

In the kitchen—Mississippi mud pie

I was preparing for this cake while on the phone to a friend who asked me how often I bake. I smiled because as of lately, I would say two maybe even three times a week! I can’t be more thankful for my absolutely amazing kitchen that inspires me to do this. i enjoy every moment whether I’m alone with all the time in the world or with Georgie who tends to cook and bake in an very different way to me. In fact i was feeling so brave the other day, I offered papa the chance to choose a cake he wanted me to bake for him. He came up with a Mississippi Mud Pie. I was actually glad because the recipe seemed uncomplicated, it does not require any white sugar and it includes chocolate! I followed a recipe I found in one of my old Marks and Spencers baking book and was blown away. You should really try this one!

in the kitchen—Victoria sponge cake

The Victoria Sponge cake or Sandwich cake has to be one of my favourite ‘white’ cakes ever. My dear friend, Alexia makes one of the best I have tasted. I sorely miss her now she’s living in London but I must admit I miss her baking just the same. My version, which I whipped up last Friday afternoon while Georgie was with his grandparents, was taken from The Great British Book of Baking, a gift from my mum. Excellent but made even better thanks to my sister’s homemade strawberry and blackberry jam.
