in the kitchen—Banana and honey flapjacks

Flapjacks are my new favourite quick and easy snack. There are a number of ways you can make them by mixing in dried fruits, raisins and even chocolate. This version is taken from Levi Root’s Food for Friends recipe book and includes dried bananas and honey. Needless to say, we love the end result. Chewy, sweet with only a tad of muscovado sugar- the recipe calls for light. I used dark and it worked.

in the kitchen—Goji berry snack mix

I want to share this new obsession of mine, an unbelievable easy recipe for healthy snacking that Georgie loves. All you do is blend a handful of goji berries and pumpkin seeds and then mix with a heaped tablespoon of heated coconut oil. Roll the mixture into little balls and place in the fridge. This is one of many super healthy recipes I have discovered in a book called Medicinal Cookery.

in the kitchen—Super Easy choc chip muffins

This is my first In The Kitchen from my new kitchen, you guys! I have been cooking almost everyday, making very good use of my super stove and fully stocked pantry and I must admit it feels good. Organization definitely becomes me. One morning I scooped up my little dude and decided to get messy. We made some super easy chocolate chip muffins, which we also added some cranberries to. It was a much-needed timeout after everything that has been going on here in Cyprus. Our financial world has been rocked to its core bringing a massive, destructive change to our society. Words I have never heard of and terms I had to look up are now part of our future and the only explanation to what we are living. Our banking system has taken a hit and once again the working class heroes were the ones being threatened. Politicians and greed have brought us to our knees and all I wanted to do was bake a few muffins.

in the kitchen—Pizza and white beans

A couple of pictures here from last week’s successful first-time attempts in the kitchen! Pizza and beans! I’ve always wanted to make my own pizza and I am very proud to say it was almost 100 per cent organic too. Apart from the dough and cheddar cheese, every single ingredient from the broccoli to the tomatoes were pesticide-free and also LOVED by Georgie. The beans weren’t a winner to begin with but mashed into a creamy potato mash was a different story. Also my little dude has newfound love for liver! It is considered a superfood and VERY nutritional, in case you didn’t know, so I was thrilled when Georgie gobbled it down.

in the kitchen—Picnic ready

Saturday late mornings are usually spent with Georgie’s cousins at TGIF, perhaps the most kid-friendly diner I know. However this Saturday, we went back to basics and snacked on fruit, cheese and bread at the Athalassa Park. I literally threw in a bag whatever I could find in the kitchen that would be picnic-suitable. It was a lovely change and one that we will definitely be doing more of. And thankfully, Georgie rediscovered his love for blueberries.
