These uncertain times are killing me. Over the past few months every time I have felt there is a life float I can grab onto and rest my flailing body, I quickly find myself submerged again. So for now I think it’s time to let go, sink and be still. I am taking the whole month of August off to process, to filter, to question, to preserve energy, to learn and unlearn.

Hello and welcome back. So let’s talk energy balls because I’ve been making loads over the past year. There are a number of reasons why I have become slightly obsessed. They are easy and uncomplicated to make, it usually takes less than 15 minutes and it means I have a constant flow of healthy treats to snack on during the day and evening. I am a big snacker so this is huge for me. After trying a mixture of recipes here are my favourite which make for great after-school treats too.
I’ve been buying organic products for over ten years now. During my pre-mama days as a writer for a newspaper here in Cyprus, I began researching the benefits of eating organic produce and using eco-friendly products. I tried and tested products and produce, wrote articles and became convinced of the long-term goodness that comes with consuming organic. Today, and three kids later, I still purchase organic although as a big family it’s not easy to go exclusively organic due to costs… Or is it? A new local online shop, Boost Bio Market, has opened and promises to knock down prices on our favourite organic brands, offering a range of products that are delivered straight to your door. My all-time favourite cookie recipe is this Hummingbird one. They’re just so easy to make. And eat. But they’re not exactly healthy and not something I can give my kids on a regular basis. I wanted a quick and easy recipe that would act as a great snack but was also flour-free. And I found it. Having now baked these several times with small ingredient changes here’s my go-to healthy cookie recipe.
