An easy weekday dinner

Parmesan chicken and kale sauté. I love the simiplicity of this recipe. I love it because it means that I can actually eat something amazing and good for me without having to create a small chaos in my kitchen on a Tuesday night. 

  • So here’s what you need:

Buy some rotisserie chicken or grab two free range chicken breasts and pop them in the oven with some olive oil, salt and pepper. Cut into strips. Or cut raw chicken breasts into thick strips and sauté for five to ten minutes.

Grab some kale, which you can find in all health food shops. And some parmesan cheese, garlic, pepper flakes, lemon juice and an onion. And some dry white wine.

  • Here’s what to do:

Sauté onion, garlic and some pepper flakes until the onion has softened. Then add kale, wine and a pinch of salt. Cover and cook for five minutes, stirring occasionally.

Put the cooked chicken in the pan, add some parmesan and lemon juice and mix everything together.
