Rice doesn’t agree with me. As much as I love a good old-fashioned fried rice with tons of soy sauce, I have had to find an alternative for the days when nursing a bloated stomach is not an option. Enter cauliflower rice!
Simply put the cauliflower IS the rice. So what you do is grab a cauliflower head, cut into small florets and put in a blender and blitz until it’s shredded and basically looks like rice. If, like me, you don’t have a blender because it broke a month ago and you still haven’t decided on which one you want to buy next, fear not because you can use a grater. It’s messy, so be warned, but it gets the job done.
From here on, your options are limitless. For my first cauliflower rice try I decided to just stir-fry with a tablespoon of olive oil, some garlic and green beans and a sprinkle of parmesan cheese. Need I say more?!
The next night, with some left over, I added coconut-crusted panfried salmon and an avocado salsa and made the most ridiculously delicious and easy dish. Also top marks for no carbs, no bloating, no hassle.
