I could write a poem or a song dedicated to this beautiful and simple recipe I’ve recently discovered. It’s that good. Buttery, biscuity, chocolatey, crunchy and absolutely irresistible, I’ve been making it once a week and buying jars of peanut butter and boxes of buscuits in case of any sudden cravings.Putting aside the heavenly combination of peanut butter and chocolate, this recipe was perfect during the summer because it’s a no bake one. And honestly who in their right mind turns on an oven when it’s 39 degrees outside!
So one morning while I was home alone with James who was sleeping like an angel I felt the need to bake. Mainly because I felt the need to devour something sweet and there was absolutely no way I was going to risk waking up that baby by taking him out.
Pinterest to the rescue and boom! I knew I had a packet of wholemeal digestives, peanut butter is a staple food in my pantry and so is dark chocolate. So I gave it a go.
Since I’m dairy-free I have had to switch the butter out for coconut oil. What a game changer! I even throw in a few teaspoons of chia seeds and some crushed up almonds. It’s now among my top favourite sweet treats of all time and a healthy one too.
