It goes without saying that our lives and daily routine have changed since moving. But this change has proven to be such a welcoming one. An inspiration to be exact. There’s an ease that comes with everything we do. Perhaps it is because I feel Georgie has the kind of freedom here he couldn’t really have in the flat. Perhaps it’s because we are in touch with nature on a day to day basis- fresh air can do you the world of good, right? Cooking in the evenings has become a soothing transition, green smoothies in the morning are keeping me high and happy. Water and dirt does the same for my little dude.

I want to share this new obsession of mine, an unbelievable easy recipe for healthy snacking that Georgie loves. All you do is blend a handful of goji berries and pumpkin seeds and then mix with a heaped tablespoon of heated coconut oil. Roll the mixture into little balls and place in the fridge. This is one of many super healthy recipes I have discovered in a book called Medicinal Cookery.
Monday was a bank holiday here in Cyprus so with the sun shining and a piece of land ready for planting we all headed for my sister’s backyard where seeds were sown. We live a stone’s throw away from each other so the goodies that will be coming from this little patch of land will serve us all.
A couple of pictures here from last week’s successful first-time attempts in the kitchen! Pizza and beans! I’ve always wanted to make my own pizza and I am very proud to say it was almost 100 per cent organic too. Apart from the dough and cheddar cheese, every single ingredient from the broccoli to the tomatoes were pesticide-free and also LOVED by Georgie. The beans weren’t a winner to begin with but mashed into a creamy potato mash was a different story. Also my little dude has newfound love for liver! It is considered a superfood and VERY nutritional, in case you didn’t know, so I was thrilled when Georgie gobbled it down.
A quick trip to the health food store and Get Fresh this afternoon and we were ready to dig in to a vegetarian lunch. We are big meat eaters in this house but vegetarian options are very frequent due largely to Georgie who loves stuff like quinoa, broccoli and veggie tofu sticks. I found these veggie sticks at Be Natural in Aglantzia. They look like long hot dogs but are made from tofu. A healthy option compared to yesterday’s Happy Meal. Oops.
