My all-time favourite cookie recipe is this Hummingbird one. They’re just so easy to make. And eat. But they’re not exactly healthy and not something I can give my kids on a regular basis. I wanted a quick and easy recipe that would act as a great snack but was also flour-free. And I found it. One of my kids loves eggs! Yay! Georgie is ok with them – he’s made his peace with the fact that he must eat eggs – but James…oh James loves them. He especially loves them scrambled which is so fantastic because that’s when I get the chance to hide a little health booster in the dish.
