Hello! Happy New Year!
I am currently sitting at the kitchen table with a salad wholewheat wrap from Chopped, which I got earlier today, on a plate next to me. Got some Spotify playing on the side too. I didn’t mean to post anything this evening because I’ve been feeling a bit meh these past few days. It’s been so cold, we spent a good couple of days in our pyjamas and papa was home too so I kind of didn’t want to leave the cocoon. It’s been a good Christmas.
We Netflix-binged. Loads. I watched Bird Box and have almost finished The Crown which I was saving for this perfect Christmas occasion. I also started watching The Art of Tidying Up – or something like that- which inspired me to clean out TWO drawers. Yas! What else did I watch? Oh yeah. You, a show about a stalker with a twist and there are good book references too. Good stuff. Papa binge-watched it in one night. Found him on the sofa at four in the morning murmuring something about finishing it.
I started reading The Handmaid’s Tale by Margaret Atwood. I’ve seen the show and flipping love it so it made sense to grab it when I saw it on my bookshelf the other day.
I’ve promised myself I will try to do at least five basic things on an everyday basis that I love doing for myself and my family but has somehow stopped being priorities. I will read everyday, I will listen to music everyday, I will bake something everyday and I will breathe everyday. I will also tackle at least one task for the day whether that’s business, family or just for me.
Above all I am anxious to get back to a healthier lifestyle mainly in the kitchen. Why are leftovers so delicious? I’ve put some weight on that I no longer even look at my jeans and that’s ok. I enjoyed it when I was doing it. I’ll just focus more now. And plan ahead as much as possible. Meal planning is ALWAYS a good idea.
So here’s some inspiration to get you and the family into a healthier but NOT complicated mode of eating better. I’ve been putting this list together for ages. It’s full of great ideas for meals and snacks recommended by mums.
- Can of chickpeas, can of sardines, tomato and cucumber diced.
- Grilled aubergine and courgette with chicken leg.
- Mini Angus burgers with veggies.
- Boiled or fried eggs.
- Bacon or sausages with veggies.
- Couscous with diced cucumber and tomato.
- Omelette with veggies.
- Orzo with broccoli.
- Chicken or beef strips in a sauce with millet.
- Chicken Lime and Coconut burgers.
- Crushed wheat pilaf aka pourgouri, quinoa and lentils with grated carrot and tomato sauce.
- Cannned cannellini beans with avocado.
- Canned chickpeas oven-baked with parmesan and paprika.
- Ravioli.
- Weetabix with milk, honey, cinnamon and chia seeds.
- Savory muffins.
- Homemade salmon fish fingers.
- Halloumi toastie.
- Frozen green beans and peas.
- Pasta with pesto.
- Grated zucchini and parmesan pancakes.
Feel inspired and realise that it doesn’t take much to maintain a healthy diet for you and your family.
